Joseph Forest’s passion for cooking expresses itself in the preparation, presentation and teaching of whole foods as a path to health and well-being. His understanding of food as medicine is the foundation of his current and expanding work.
Joseph is happy to return to Innisfree Farm in June to focus the catering services for the 2017 Herbal Gathering. As the Chef-In-Residence at Innisfree for two growing seasons from 2011-2013, Joseph taught a culinary program to the farm interns, prepared meals for staff, guests and special events (including the 2013 Herbal Gathering). He also collaborated with Chanchal Cabrera in designing and teaching Culinary Medicine programs to the public.
Joseph has over 30 years of cooking experience in fine dining restaurants, hotels (including the Four Seasons), and catering to Hollywood film crews and stars in the Vancouver film industry. Recently he lead a kitchen team in designing a signature farm-to-table cuisine for a holistic conference and retreat center in Colorado using food drawn from their grass-fed livestock, organic green house and outdoor garden operations.
Additional accomplishments include co-writing the Canadian best-selling ‘Cooking Vegetarian’ with Vesanto Melina, RD, co-authoring two corporate cookbooks (including Terry Willard’s Herbal Detox Cookbook for Cleansing), and consulting to several natural food manufacturers.
His numerous appearances on television, radio, and cooking stages in Canada and the USA is a source of learning for large audiences where he shines in his enjoyment of teaching people the merits of eating well to be well.
